Lee's Summit announces new Popeye's El Toro Loco and Pho Noodle Go openings

Exciting new developments are taking shape in Lee's Summit, Missouri, as the city gears up for a wave of restaurant openings and commercial projects in 2025.

Popeye's Louisiana Kitchen is set to make its debut at the former Line's Choice location in Summit Orchards, bringing its famous fried chicken and spicy sandwiches to the community. Meanwhile, El Toro Loco, an authentic Mexican restaurant, will take over the former On the Border site at Summit Woods Crossing, offering a menu filled with street tacos, enchiladas, and fajitas.

Pho Noodle Go has already begun serving customers with a soft opening at the former Pepper Jack's Grill in Summit Woods Crossing, featuring a variety of pho noodle soups and daily specials. The restaurant is expected to fully open later in 2025.

In addition to these eateries, a new QuickTrip is on the horizon at 1001 Southwest Blue Parkway. The existing car wash is being demolished to make way for a 5,300 square foot QT building, which will remain operational during construction.

The ambitious Discovery Park project is also underway, with its first phase, known as "The Village," currently being graded. Among the first constructions will be a TownePlace Suites Hotel by Marriott, offering spacious accommodations with full kitchens.
