Don Scarborough seeks funding for upgraded kitchen at downtown bistro

The City of Terrell is set to enhance its downtown dining scene following a recent meeting where the Park and Downtown Improvement Corporation discussed a funding application for a local bistro's kitchen upgrades. The establishment, which previously served food, is undergoing significant renovations to comply with updated city codes, including the installation of a new vent hood and other essential kitchen equipment.

Owner Don Scarborough presented the application, detailing the financial challenges faced in bringing the kitchen up to code. The upgrades, which include electrical work, grease traps, and signage, are estimated to cost around $15,000, with the owner covering a substantial portion out of pocket. Scarborough emphasized the importance of these improvements not only for compliance but also to attract more patrons to the downtown area.

The kitchen, located in a courtyard between two buildings, has undergone changes to meet safety regulations, including enclosure modifications that were not previously required. The city’s health and building inspectors have approved the current setup, which allows access to the kitchen from the main building without going outside.
