Espo's Mexican Food is making waves in Chandler, Arizona, thanks to its signature green chile burrito, which has become a customer favorite and a cornerstone of the business. During a recent discussion with Councilmember Angel Encinas, owner Leon shared insights into the meticulous process behind this beloved dish.
The green chile burrito stands out as the top item on the menu, drawing customers back time and again. Leon revealed that the secret lies in sourcing high-quality green chilies from Hatch, New Mexico. "We go through and harvest so many chilies throughout the years that I was able to secure a growing field," he explained. This commitment to quality ensures that the chilies are fresh and flavorful, as Leon and his team visit the fields twice a year to monitor the growing conditions and harvest the chilies.
