Jose Cortez seeks approval for new Old School Mexican restaurant liquor license in Lehi

The Greeley City Liquor License Authority convened on August 15, 2025, to discuss a new liquor license application for the Old School Mexican Restaurant LLC, located at 2319 Eighth Avenue. The meeting featured owner Jose Cortez, who expressed his commitment to establishing a traditional Mexican dining experience in the community.

City Clerk's representative, Miss Fletcher, presented the application details, noting that the city had published the required notices and received no public inquiries or concerns. The application underwent review by the city's liquor licensing administrative team, which found no issues from the Planning Department. However, Code Compliance highlighted the need for the removal of previous signage and compliance with window signage regulations, as well as landscaping requirements to be met within a year.

The Police Department initially raised concerns but later withdrew them after reviewing additional documentation. Cortez confirmed that he had submitted fingerprints, which revealed no criminal history. The application included a petition with 43 signatures from local residents, although 23 were invalidated by the clerk's office, leaving 20 valid signatures in support.

During the meeting, Cortez emphasized his desire to create a welcoming environment for the community and shared his efforts to engage with local residents about the restaurant. He noted that while some residents were not home or declined to sign the petition, most who did were in favor of the establishment.

The Authority discussed the decision options, which included approving the application, denying it, or postponing the decision for further information. The next steps involve an inspection scheduled for September 1, 2025, to secure the necessary certificate of occupancy and business license.
