The Brentwood Beer Board on an unanimous voice vote approved on‑premises beer permits for 100 Pizza LLC, 214 Ward Circle, Suite 200, and Pacadee Buie Inc (d/b/a Zushirito), 214 Ward Circle, Suite 700.
Board members approved the permits after applicants described procedures intended to prevent underage sales and over‑service and answered questions from commissioners and the police chief.
Michael Miles, owner of 100 Pizza LLC, told the board his 13‑seat restaurant will card “regardless of what they look like,” and described a written protocol that includes prominent signage, use of a UV detector to inspect Tennessee driver’s licenses, a “one ID, one beer” rule and keeping beer behind the counter. “If we’re ever in doubt of somebody being legally, you know, of age to drink, we’re just gonna deny it,” Miles said. He also said the business will not permit third‑party or courier alcohol pickup or delivery; beer sales will be in‑store only.
Board members pressed on staffing and safeguards. Miles said three employees are younger than 18 and that minors will be prohibited from handling, stocking or serving alcohol. The board’s police chief encouraged use of point‑of‑sale (POS) prompts that require entry of a birth date; the chief said automatic date checks reduce the risk of erroneous service and cited an example in which a staff error led to a temporary license suspension elsewhere.
For the second application, Takini Moon San, who said she recently took ownership of the restaurant space and will retain recipes including banh mi, told the board she has served beer at other restaurants and that servers will hold ABC (alcohol‑service) cards. “We serve I serve beer too. I have ABC card too,” Moon San said. She confirmed that some existing staff have ABC certification and that new hires will be required to have or obtain training.
Commissioner Travis moved to approve the beer permit for 100 Pizza LLC; Commissioner Guevara seconded. The board voted unanimously in favor. For Pacadee Buie Inc (Zushirito), Commissioner Travis moved to approve and Commissioner Donahue seconded; that motion also passed unanimously.
The board opened the meeting by approving the minutes of the prior meeting; Commissioner Dunhugh moved approval. No members of the public signed up to comment.
The board noted that, once approved, applicants could pick up their permits at the board office; the chair said a permit would be available to 100 Pizza LLC immediately in anticipation of the vote.
The board adjourned after taking the two permit votes and closing new business.
