Board approves food-truck permit; owners say they plan brick‑and‑mortar at Thornton Street site

The Board of Aldermen on Sept. 16 approved a food-truck permit for Nanakuri LLC to operate at 1419 Thornton Street. The measure was recommended by Planning and Zoning and received a motion and second from Aldermen Lesh and Stewart before the board voted to approve the permit.
Applicant Paul Singh told the board he currently operates a food truck in Pacific and hopes to purchase the Thornton Street property and build a permanent restaurant. "Eventually, we wanna build a proper restaurant there, but we do need some time over this kind of business ... that's why we haven't bought the property yet," Singh said. He said the site has existing utilities from prior use and that the owners plan to provide parking for 10–12 cars initially.
City staff told Singh they would work with him on the site-plan process, utility checks and any permit requirements before a brick-and-mortar buildout. The Planning and Zoning Commission had reviewed the application and voted to recommend approval prior to the board meeting.
With the permit approved, Singh and his partners may continue operating the food truck while pursuing site work, title work and required permits for a future restaurant.
