Council extends FM Pizza permit and approves Saucy Bros food truck permit at Blanco Brew

The Wimberley City Council approved two temporary-structure items on April 3, 2025: a three-month extension for FM Pizza at 13620 Ranch Road 12 and a new one-year permit for Saucy Bros food truck to operate at 14200 Ranch Road 12 in front of Blanco Brew.

City staff reported no complaints about FM Pizza’s operation in the green-space picnic area, and the council moved to extend the temporary permit for another three months. The motion passed unanimously.

For the new food-truck request at Blanco Brew, owner Rachel Emery provided a written statement supporting the truck’s use of the location in front of her business, noting prior approval at the same spot for a former tenant and describing safety and parking concerns about placing a truck behind the building. Applicant Robert Walker (representing the truck owners) said the proposed hours are 7 a.m. to 3 p.m., seven days a week, and that the trailer is newly built. Council members discussed traffic flow, parking, and a recommended duration for the temporary permit. The council approved the permit with a renewal date set for one year from the decision; the vote was unanimous.

Council did not adopt any changes to the site plan at the meeting beyond approving the temporary permits and setting the Saucy Bros permit for a one-year duration. Staff and the applicant will handle required health-department, electrical, and grease-trap inspections before ongoing operation. No objections were recorded during the meeting.

These permits were processed under the city’s temporary-structure procedures; the council noted the permits are time-limited and subject to renewal or revocation under city code.
