At a Lincoln Town Council work session on April 14, staff reviewed applications for mobile food‑truck establishments and raised two recurring administrative issues: staggered town license expiration dates that do not match state licenses and outstanding proof of police detail for a planned event on Higginson Street.
Town staff identified an application from Tiffany Mayo, doing business as Grazing Table Charcuterie, and a separate application for a PVD truck event at Booth 100 on Higginson. Staff said some applicants are asking that the town not require a new local license until the applicants’ state food‑service licenses next come due in June or July, rather than in April when the town license would otherwise expire.
Staff also told the council that, for at least one Higginson street event, the organizer had not yet provided the police‑detail confirmation the applicant agreed to supply. Council members and staff noted the town’s typical approach: if a brick‑and‑mortar business were opening, the applicant would be required to hold a town license before operating. For mobile vendors, staff said they will still require confirmation from the police chief that public‑safety arrangements meet town requirements before issuing or allowing operation.
No formal vote or ordinance change occurred at the work session; the topic was presented as part of agenda review and set for further processing in the clerk’s office.
