The Business, Housing and Zoning Committee approved an on‑sale liquor with Sunday sales and limited entertainment license for Tropico Colombian Street Food LLC, located at 430 North First Avenue, Suite 101, during its March 4, 2025 meeting.
Christina Steester, lead license inspector in Licenses and Consumer Services, told the committee the restaurant seats 47, will operate Sunday–Thursday 11 a.m.–9 p.m. and Friday–Saturday 11 a.m.–10 p.m., and that notices had been sent to property owners within 450 feet and nearby neighborhood groups; staff had received no community objections and recommended approval.
Amy Muradu, appearing for the applicant, described Tropico as the first Colombian restaurant in the Twin Cities and thanked the committee for the opportunity to open downtown. Councilmember Katie Cashman praised the women‑owned business and moved approval; Chair Jamal Osman called the voice vote and the motion carried.
The licensing division will finalize the paperwork and issue the license consistent with city licensing rules.
