The Economic and Development Committee approved a Class B Tavern and Public Entertainment license for Silly Goose Bar, MKE, LLC, at 5906 West Burnham Street.
Agent Andrew Allis told the committee he will lease (not buy) the building and manage the bar himself. Allis said he previously owned a Milwaukee bar from 2017 until the COVID pandemic and that his family has operated restaurants and bars; he said he has been a bartender since age 18. “This will be my source of income,” he said when asked about management and staffing.
Allis said he plans a modest food program, initially offering pizza and small fried appetizers, and that the space has a small kitchen and hood but no exterior seating or sidewalk service. He told the panel he will provide receptacles for cigarette butts and assign bartenders to keep the public area clean. He said he hopes to open in March and that his licensing and bartending certifications are up to date.
A motion to approve the license passed by voice vote. Committee members wished the applicant luck and reminded him of licensing rules, hours and requirements for purchasing from licensed wholesalers.
