Trustees hold first read for Pronto Sandwiches’ Class B2 liquor-license application

The HIMSA Board of Trustees on March 18 held a first reading of an application by Pronto Sandwiches for a Class B2 liquor license at 114 South Washington in Hinsdale. Owner Peter Bertie told trustees Pronto plans to serve beer, wine and cocktails such as espresso martinis and Aperol spritzers in the front portion of the space and has applied for outdoor seating.
Pronto currently operates at the Il Poggiolo location, Bertie said, and the new site was previously occupied by Kaya Cantina, formerly known as K Miso. One of the former Kaya Cantina owners intends to seek a separate license for a different operation called Pordestino in the rear of the property; that application had not been filed and was not under consideration at the March 18 meeting.
Bertie said the front dining area will offer sit-down service and carryout. He estimated roughly 30–40 seats inside and about 45 outdoor seats. He said daytime service may be counter-service and that servers would likely be used in the evening. The police chief reported no issues with the application as presented. Trustees asked routine clarifying questions but took no action; staff said the license will return for a second read.
