City staff told the commission at its May meeting that the interim operator at Forest Lake Golf (Down to Earth) is short-staffed and is not yet maintaining advertised restaurant hours. The commission directed the operator to submit a written menu and schedule and scheduled a more detailed 30-day status update to be delivered at the next meeting.
Assistant City Manager Mike Grama corrected remarks the city previously circulated: he had announced restaurant hours of 7 a.m. to 6 p.m. based on information provided by Down to Earth, but staff later learned the operator had reduced hours while hiring a new cook. Grama said the transition had been in place about 19 days and that agronomic work (aerification, fertilization, top-dressing and pre-emergent vegetation control) was underway.
Staff asked Robert Yucey (with ZHA), Down to Earth representative (likely Nick Dunleavy), and Parks & Leisure staff (Mark Johnson) to deliver a 30-day update at the next commission meeting, outlining menu, operating hours and course condition. Grama also said he anticipated issuing a request for proposals (RFP) for a permanent operator early the following week.
No action was required of the commission at the meeting beyond the direction to staff and the operator to provide the information and to continue recruitment for a permanent operator through an RFP process.
