Cassandra's owner marks longstanding Keller presence, credits family recipes and homemade tortillas

Juan Perez, owner of Cassandra's, said during a public comment period that he and his wife, Gloria Perez, opened the restaurant in Feb. 2004 and have operated it “for almost 21 years.”
Perez said Cassandra's is one of the few local restaurants that makes its own tortillas and prepares marinades and other items fresh each day, using recipes he learned from his mother. “We don't use anything pre made or nothing, we make our own recipes like our marinades for the fajitas, fresh daily,” he said.
Perez described popular menu items and options customers use to compose meals. “I think 1 of the most popular places, like Cowboy Special, it's enchiladas with fajita meats on top. We have the brisket too, of course fajitas. I think 1 of the things that like the the customer they like is they make their own combo. You can choose enchilada, tostada, different different things,” he said.
He also recounted starting the business after a brief restaurant job in Arlington that convinced him he could open his own place, and invoked his faith when reflecting on the restaurant's role in the community: “I always put the Lord first. The Lord gave me opportunity to give you a job to a few people.”
Perez closed by saying he appreciates Keller and plans for Cassandra's to remain in the city: “I love Keller, and I love the the people in Keller. So I don't think Moon Casandra anywhere else is to stay here.”
