Board clears new carry‑out ‘Pastaru’ for 133 Mineola Boulevard; owner outlines fresh‑pasta concept

The Mineola Board of Trustees on Wednesday approved a special-permit application to open a carry-out fresh-pasta restaurant called Pastaru at 133 Mineola Boulevard.
Applicant Simone Pulieri told the board the concept is a fast-casual, build-your-own pasta operation in which customers choose pasta shapes and sauces; the business will make fresh pasta on-site each day and offer a small selection of hot, ready-to-eat sides. Pulieri said the space is about 1,500 square feet and the operation will staff four to five employees per shift.
Pulieri said the buildout will include a small back-of-house kitchen, a restroom and refrigeration and estimated the construction timeline at two to three months from approval. “From the day of the approval, I believe, you know, no more than 2 or 3 months altogether,” Pulieri said when asked about the timeline.
The board and staff discussed refuse and loading access. Village staff reminded the applicant that new food-service tenants typically must arrange private carting rather than relying on curbside pickup; Pulieri said she will work with the landlord and the village to find a solution. The applicant also said she plans to participate in third-party delivery services such as DoorDash and Grubhub.
Trustees also raised parking concerns for the busy Mineola Boulevard corridor and encouraged the applicant to direct customers and delivery drivers to nearby municipal lots and garages. Deputy Mayor Sartori and others noted that daytime parking can be tight and that enforcement is the responsibility of police if drivers double-park.
The motion to approve the special use permit was made by Deputy Mayor Sartori and seconded by Trustee Casado; Trustees Clark, Casado, Soloski, Sartori and Mayor Ferrer voted in favor. The board asked the applicant to coordinate with building department staff (Mr. O'Keefe) on signage, permits and inspections before opening.
