Staff to audit concession operations; food trucks allowed with park permission

Parks staff told the board they will deliver a formal end-of-season report on concession-stand operations, including revenue, menu streamlining and recommendations for future management. Staff said the city already holds health permits for concession locations and that outside vendors must have appropriate permits and insurance to operate in park facilities.

The board discussed options including contracting with local restaurants to operate a concession stand for a season or allowing permitted food trucks to serve at events. Staff noted a health-permit threshold that increases when a vendor operates beyond a certain number of days — described in the meeting as roughly 10–12 days — and said vendors would need site-specific permits and to release the city on insurance. Staff also said they may propose having existing park partners administer concession operations if standalone operations are not financially viable. A formal concession report and staff recommendations are expected at the end of the season.
