Eden Prairie liquor stores raise $12,593 for PROP; city proclaims Empty Bowls Day

Mayor Ronald A. Case presented a check and a proclamation Tuesday recognizing PROP (People Responding in Volunteer Partnership) after Eden Prairie liquor stores collected $11,593.31 in a November dollar-drive, plus a $1,000 contest prize at the Prairie View store, for a total of $12,593.31.
The proclamation, read aloud at the Feb. 4 council meeting, declared Tuesday, Feb. 18, 2025, “Empty Bowls Day” in Eden Prairie and cited PROP’s 54 years of service and the organization’s 2024 numbers: 1,406 households and 5,164 individuals served. The proclamation named Saint Andrew Lutheran Church as the Feb. 18 event location.
Jennifer, PROP executive director, thanked the city, restaurants and volunteers and described the event as “a time-honored and treasured event that brings the community together,” noting donated soup, a pottery demonstration, and music from local children’s choirs. Jaime Urbina, the city’s liquor operations manager, told the council the stores’ drive was the highest total to date.
City leaders praised PROP and other local nonprofits for supplementing services outside the scope of government programs. The mayor and council members presented a plaque and participated in a photo opportunity with PROP staff.
No formal council vote was recorded for the proclamation. The presentation and proclamation were made on the council floor during the Feb. 4 meeting.
