The St. Louis Park City Council voted unanimously to approve an on‑sale cocktail room and off‑sale micro‑distillery license for Hennepin Distilling LLC doing business as Copper Wing Distillery at 6409 Cambridge Street, following a staff presentation and a police background check.
Amanda Scott Laerdal, deputy city clerk, told the council the business had changed its ownership structure to sole ownership by Kyle Kettering and filed under a new Minnesota tax ID. She said city ordinance, chapter 3, section 69 requires council approval for changes in ownership interest of liquor license holders. Laerdal said the premises remain 600 square feet with an indoor seating capacity of 40, and that the distillery produces less than 40,000 proof gallons per year.
Laerdal said the police department completed a full background investigation and found nothing that would warrant denial.
The council opened and closed the public hearing with no speakers, then moved and seconded a motion to approve the license. The motion passed unanimously.
Next steps: staff will complete licensing paperwork and notify the applicant of the council decision.
