Boulder HRC to trial plant-based default for meeting meals in January

The Boulder Human Relations Commission agreed at its Dec. 17 meeting to trial a plant-based default for catering at its next in-person meeting in January.
The idea came from an Environmental Advisory Board email noting the board would default to plant-based meals while still offering non‑plant options on request. Commissioners discussed logistics, budget and vendor availability; staff said they already work with a city colleague who coordinates meals and can identify vendors with plant-based options.
Commissioners proposed running a single trial meal in January and asking meeting registrants to indicate dietary needs so non‑plant meals could be provided on request. One commissioner said the approach should make plant-based the default while preserving accommodations for specific dietary needs.
No formal ordinance or budget change was made; staff will coordinate a January trial and report back to the commission.
