Marshfield committee grants 90-day extension for Taqueria Monarca liquor license

The Marshfield Judiciary and Licensing Committee on Jan. 7 approved a 90-day extension for Taqueria Monarca’s class B reserve liquor-license opening deadline, granting the applicant until May 17, 2025, to complete construction and begin operations.
The extension was requested under Marshfield Municipal Code §9.3211 after the restaurant—one of two recent applicants approved for the city’s remaining reserve license—missed the original opening deadline of Dec. 26, 2024. Committee members voted in favor after a motion to grant the extension was made and seconded; the motion carried by voice vote.
Co-owner Andres Aguirre told the committee that construction delays, contractor setbacks and supply-chain problems—along with issues involving a neighboring tenant and the property owner—have pushed the opening timeline back to May. Aguirre described the business as a mostly self-serve taqueria and said the project is underway, showing committee members a short design video of the interior layout. “We are making every effort to expedite the process,” Aguirre said, and asked for the extension to allow completion of the project.
City staff (Jessica) told the committee this body has authority under Marshfield Municipal Code §9.3211 to grant a 90-day opening extension to applicants previously issued a class B license. Jessica also said there is one other pending application for a reserve license; that applicant has not paid fees and staff is pursuing the purchase of an additional license from another municipality under a recent change in state code, but no sale was yet confirmed.
During discussion, committee members asked whether the city had handled similar extension requests before; members noted such requests are uncommon in recent years but within the committee’s discretion. A motion to grant the extension was made by Rebecca (committee member) and seconded by Mr. Curran; the committee approved the extension by voice vote.
Aguirre told the committee he expects the business to create jobs and economic activity; he estimated starting monthly sales and described planned investment and hiring in his remarks. Those figures were presented by the applicant and not independently verified during the meeting.
With the extension granted, Taqueria Monarca retains the reserve class B license previously issued by the committee and may proceed with construction toward the applicant-stated May opening.
