Student urges more vegan options in district lunches

Chin said Jefferson High’s regular vegetarian offerings are limited to an egg sandwich and cheese pizza and that most rotating lunch entrees include meat (for example, pasta with meatballs, alfredo with chicken, baked potato with bacon). "I noticed that during school lunch, there aren't that many vegetarian and vegan options…we should have a rotating vegetarian or vegan option," Chin told the board.
Board members received the comment; no formal action or response was taken at the meeting beyond acknowledgment.
The district did not provide a response at the meeting about nutrition services or next steps for menu changes.
