The Apple Valley City Council on Oct. 23, 2025, adopted a resolution approving an on-sale intoxicating liquor license and Sunday liquor sales for Brick and Bourbon Apple Valley LLC and approved routine consent and calendar items.
City staff told the council a notice of public hearing was published as required by city code and that the police and fire departments had conducted investigations and found no reason to deny the license. Councilmember Grendahl moved the resolution to issue the license; Councilmember Bergman seconded the motion, which passed by voice vote.
Gary Sevier, representing Brick and Bourbon Apple Valley LLC, introduced himself after the vote and said the restaurant hopes to open in “the next week or two,” pending completion of build-out steps.
