Kent, the county’s environmental health/sanitation presenter, told the board the county must meet MDH delegation criteria for food, beverage and lodging inspections, including staffing ratios. He said the county currently lists 331 establishments and that MDH requires roughly one full‑time inspector per 250 licenses. Kent said the county already has one variable‑hour employee, Olivia, who is now certified and “eligible to sit and meet the requirements for MDH for the delegation agreement,” and that a previous sanitarian (Abby) has given notice and will no longer be employed.
