Celeste said the proposed operation is restaurant-first and not intended to be a bar: the business expects to serve sushi and accompanying sake and mixed drinks rather than operate as a late-night tavern.
Commissioners pressed the applicant for proof that the manager — and ultimately the staff — will be trained in Massachusetts alcohol-service rules. One commissioner told the applicant the commission was not “getting that” from his current submissions and proposed continuing the hearing so the manager could obtain TIP certification, a commonly used training in Massachusetts for responsible alcohol service.
The commission’s motion to continue the application was seconded and the hearing was continued to the commission’s next scheduled meeting. The commission indicated the applicant may proceed with construction and other non-license work while the license application is pending, but must return with training certification before the commission will consider final approval.
