Beer board approves Shredders Lair permit; three applications noted as cleared by regulatory

The Chattanooga City Beer Board on Sept. 4, 2025, approved a beer-only permit for Shredders Lair (Shredders LLC, bureau number 1357) and recorded that two other beer permits — 100 Food 8 LLC (beer #1321) and Riverside Collection LLC (beer #1352) — had been approved by regulatory staff.
Shredders Lair owner and applicant Brian Hennen told the board the business will operate primarily as a used music retail store with instrument repairs, a small café offering coffee, tea and prepackaged food, and beer sales only. “Just beer for now,” Hennen said. He said operating hours will be Tuesday through Saturday, 8 a.m. to 10 p.m., and that the establishment’s occupancy listed on the health report is 49.
Board members put the permit to a vote after a brief background-check clarification: Hennen answered questions about a 2015 probation violation for underage possession. The board was told the sentence was completed June 12, 2015, which the board secretary said placed the matter outside the 10-year interval that would bar issuance; the board then voted to approve the permit.
Why it matters: new on‑premise alcohol sellers affect public safety, neighborhood impacts and enforcement needs. At the meeting, both board members and a public-safety trainer emphasized enforcement coordination and staff training as part of permit compliance.
Public comment during the meeting came from Calandra Smith of the Hamilton County Coalition, who urged board members and permit holders to ensure employee and manager training and to call 911 promptly when disorder occurs. “If you have a doubt, call 911,” Smith said, urging that a 911 call creates a report number that helps later enforcement and board proceedings.
Board procedure and other administrative notices at the start of the meeting included approval of the Aug. 21, 2025 minutes and a reminder that meetings are held under the Sunshine Law and that attendees must sign in. The board also noted a new temporary permit list had none and asked applicants present to be sworn in.
The board’s action: the motion to approve Shredders LLC (bureau #1357) carried in a roll-call sequence in which board members responded affirmatively. 100 Food 8 LLC and Riverside Collection LLC were announced as already approved by regulatory staff; Franks and Toe Beans LLC (beer #1358) was noted but the transcript records only that it had been approved by regulatory and no further board action was recorded on it during the meeting.
What’s next: Permit holders were reminded of ongoing responsibilities, including occupancy limits and incident reporting; board members and the public commenter highlighted manager training and timely notification to police when disorderly incidents occur.
