Carbondale liquor commission approves two restaurant liquor licenses for Pagliacci Pizza and Tienda La Paloma

The Local Liquor Control Commission on Oct. 8 unanimously approved applications for on-premises secondary restaurant liquor licenses with package sales and catering riders for Pagliacci Pizza of Carbondale Inc. and Tienda E Taqueria La Paloma Corp.

Staff told the commission that the $100 application fees for both applicants had been paid and that criminal-history checks “did not reveal anything that would preclude the applicant from holding a liquor license.” Staff recommended approval with the condition that remaining outstanding items be submitted before final issuance.

For Pagliacci Pizza, doing business as Pagliacci Pizza at 509 South Illinois Avenue, the application included video gaming and catering riders. Commissioner Colombo moved to approve the license; Commissioner Maxwell seconded. The roll-call vote was recorded as Commissioner Stanfield: Yes; Commissioner Colombo: Yes; Commissioner Loes: Yes; Commissioner Maxwell: Yes; Chair Harvey: Yes.

For Tienda E Taqueria La Paloma Corporation, doing business as Tienda E Taqueria La Paloma at 1402 North Illinois Avenue, Suite 505, the commission heard the same staff recommendation and rationale. Commissioner Colombo moved approval; Commissioner Stanfield seconded. The roll-call vote was Commissioner Stanfield: Yes; Commissioner Colombo: Yes; Commissioner Loes: Yes; Commissioner Maxwell: Yes; Chair Harvey: Yes.

Both approvals were recorded as contingent on receipt of outstanding items identified by staff; the commission listed denial as an alternative if applicants failed to meet code provisions.

The commission also approved its meeting minutes from Aug. 26, 2025 earlier in the session.
