Council approves conditional use permit for Veterans Field concession and restrooms at Minnetonka High School

The Minnetonka City Council adopted a resolution approving a conditional use permit and final site and building plans for a new concession stand with restroom facilities at Veterans Field on the Minnetonka High School campus, 18301 Highway 7.

Miss Wyschnick, planning staff, said the project replaces temporary restrooms and will not increase impervious surface or impact natural features. The Planning Commission reviewed the proposal and recommended approval on a 4–0 vote before forwarding it to the council.

Architect David Maroney, president of ATSR and the project architect, described durable, low‑maintenance materials and energy‑saving systems planned for the building, saying the design uses “very durable materials” and that the design includes features such as an “high efficiency, instantaneous water heater system,” rooftop-unit temperature controls and occupancy sensors to control lighting.

Why it matters: The project replaces portable restrooms with permanent facilities and includes retaining‑wall reconstruction; it affects school users, community sports programs (the Minnetonka Monarchs town‑team baseball) and visitors to Veterans Field.

Council discussion was supportive and included a request from Council Member Romilly that staff and the district consider sustainability features where feasible; Council Member Schack called the replacement of portable toilets with a permanent facility “a major improvement.”

Council Member Romilly moved adoption of the resolution approving the conditional use permit and final site and building plans; Council Member Schack seconded. The motion passed on a unanimous roll call vote.
