The Shelbyville Beer Board voted to approve a beer-permit application for Flamingo Fiesta, a seasonal seafood restaurant at 405 North Thompson Street, and directed staff to issue the permit after the applicant pays the prorated annual privilege tax.
Brandy Pinto Gonzales, the applicant and property owner, answered questions from the board about operations and license compliance and said the business is family oriented and intends to remain a restaurant, not a bar. “We’re very family oriented, and we do not wanna become a bar,” Pinto Gonzales said, describing a fenced backyard seating area the restaurant uses for seasonal service.
The board confirmed several operational details on the record: the location’s seating capacity is listed as roughly 60–75, the establishment currently uses about 20 indoor tables plus picnic tables outside, and the business plans to start with four employees. The applicant said hours would initially be Thursday through Saturday, 4 p.m. to 10 p.m. The board discussed a discrepancy between the business tax license name (listed as Flamingo Fiesta) and the permit application name (Flamingo Plaza); staff said they would amend the application so the permit will issue under Flamingo Fiesta.
Board members asked about measures to prevent underage sales; the applicant said the point-of-sale system (Cake) can be set to require a birth date for alcohol sales. The board noted alcohol service will be confined to the fenced backyard seating area and that signage and staff monitoring will be used to prevent alcohol from leaving the designated area.
A motion to approve the application was seconded and the members present voted in favor. The board clerk told the applicant she may pick up the permit at City Hall after 10 a.m. and must pay a prorated annual privilege tax of $83.30 at the time of issuance.
The board also placed Latin Bridge (referred to in the meeting as Latin Drinks/Latin Bridge) on the agenda for the board’s April meeting; staff reported that building-and-codes staff had reviewed the property and that Latin Bridge provided updated information to the board.
