El Paso County approves brewpub liquor license for Ascent Brewery at 6630 Chief Road in Peyton

The license hearing was handled as an abbreviated proceeding after the county clerk reported that state and local requirements had been met and no opposition had been filed with the clerk’s office. Eva Garretson, a representative of Liquor Pros, the third‑party firm that conducted the neighborhood survey, told commissioners the team attempted 79 contacts and collected 50 signatures: three from businesses and 47 from residents. Garretson said 39 of the residential signatures were in favor, three opposed and five expressed no opinion; combining business and residential responses, she reported roughly 84 percent in favor, 6 percent opposed and 10 percent with no opinion. Garretson said the opposing signatures declined to provide reasons.
Owners Joseph (Joe) Pru and Stephanie McDermott, both identified in the hearing as military retirees and co‑applicants, described plans for a family‑oriented brewpub with limited operating days and hours to avoid conflicts with nearby school activity. They said hours will be Thursday and Friday 3 p.m. to 9 p.m., Saturday noon to 9 p.m., and Sunday noon to 9 p.m. The applicants said they had obtained a variance of use from the county slightly over two years earlier.
The clerk reported the sheriff’s investigation found no criminal history relevant to issuance of the license. After discussion the board approved the motion to grant the license. A roll call recorded votes in favor from Commissioner Bremer, Commissioner Weisong, Commissioner Applegate, Vice Chair Williams and the chair; the motion passed 5‑0.
The license type approved — a brewpub liquor license — authorizes on‑premises sale of full liquor as defined by state and local licensing rules; the board dispensed with a formal hearing based on the clerk’s and sheriff’s reports. The applicants and the licensing consultant referred commissioners to the submitted neighborhood survey as evidence of local need and desire for the outlet. The county clerk will complete final administrative steps required to issue the license.
