Boulder licensing authority approves Fuji renewal, continues El Taco Imperial and other items

At its Jan. 15 meeting the Boulder Beverage Licensing Authority approved a renewal for Fuji restaurant, continued a new-application hearing for El Taco Imperial to February pending proof of training, approved two boundary maps and continued a pending Nepal House application because required documents were missing.
The Boulder Beverage Licensing Authority on Jan. 15 approved a routine renewal for a downtown restaurant, continued one new-application hearing pending proof of employee training, approved two license-boundary settings and continued another application that lacked required petitioning and documents.
Renewal approved: Sherpa Holdings 2015 LLC (dba Fuji restaurant), 2018 Broadway, received authority approval for a hotel-restaurant liquor-license renewal. Pemba Sherpa, who identified himself and was sworn for the record, told the board he missed the original renewal deadline because he recently had a newborn but said he had arranged for his accountant to handle filings going forward. Member Karl moved to approve, and the board voted in favor.
New application continued: El Taco Imperial de Texcala, LLC (2850 Iris Ave., suite H) did not present proof of completed employee training. Applicant Margarita Castrejon appeared and said she was seeking to train staff; the authority continued the application to the February hearing and asked the applicant to return with either proof of training or a clear plan and a more detailed alcohol-service policy. Licensing staff suggested the applicant contact the Responsible Association of Retailers (RAR) for training resources and offered to provide contact information; the licensing office also posted a public contact email: licensingonline@bouldercolorado.gov.
Boundary settings: The board approved proposed neighborhood boundaries for two new licenses. Fergie's Indoor Golf Inc. (dba The Birdie Factory), 2520 Arapahoe Ave., received boundaries roughly bounded by Pearl (north), Marion Extended (south), 30th Street (east) and 20th Street (west). Mister Oso Boulder LLC (1253 Pleasant St., unit 101) received boundaries bounded by Arapahoe (north), Baseline (south), 20th Street extended (east) and city limits (west).
Other continuances and administrative items: City licensing requested a continuance for Nepal House LLC (application missing petitioning and other materials); the authority granted that continuance. The board also approved minor edits to and adopted the Dec. 18, 2024 minutes. Licensing staff introduced the new licensing manager, Alisa Darrow, to the authority.
