Trustees greenlight Dom Pollo rotisserie restaurant at 124 Old Country Road

The Village of Mineola on Nov. 11 approved a special‑use permit allowing Dom Pollo, a family‑operated Peruvian rotisserie chain, to open at 124 Old Country Road.
Brian Baldoceda, owner and president of Dom Pollo Incorporated, told trustees the chain has operated in New York City for about 20 years and expects to employ “approximately 5 to 7 team members” at the Mineola location. Baldoceda said the restaurant will operate daily from 11 a.m. to 10 p.m., emphasize takeout and delivery, and use municipal parking behind the strip mall to limit curbside congestion.
Deputy Mayor Sartore and trustees asked about signage, delivery timing and trash collection; Sartore urged the applicant to coordinate delivery times and to use the municipal lot rather than park supply trucks on Old Country Road. Baldoceda said only limited interior work is planned (hood and fire suppression installation) and that the business will engage Mineola Signs for compliant exterior signage.
Trustee Casado moved to approve the special‑use permit; Deputy Mayor Sartore seconded. The board voted in favor and welcomed Dom Pollo to the village; Baldoceda said he hopes to open next month.
The approval includes the standard condition that the applicant obtain building and fire permits and comply with village signage and trash‑management requirements.
