Council approves development plan for LongHorn Steakhouse at Coughlin's Crossing (Res. 25‑76)

City Council on Oct. 27 approved Resolution 25‑76, a development plan for a LongHorn Steakhouse on roughly 2.35 acres within the Coughlin's Crossing development.
Planning staff presented the proposal and noted the building is about 5,700 square feet, 27 feet tall, and will have a parking area with 127 off‑street spaces accessed from Coughlin Lane. The site plan includes two access points to funnel traffic into the parking area, a proposed future access easement for potential access to the north, pedestrian connectivity to the existing multi‑use path, and bicycle parking as required by the city’s updated code. Elevations were revised to add additional stone to meet the development text’s design requirements.
Scott McClintock of Cass Corporation, present for the applicant, said the company is excited to bring the restaurant to Coughlin Crossing and expects engineering plans to be approved soon with construction possible this winter.
Planning commission and staff recommended approval with the conditions listed in the resolution. Council voted to approve Resolution 25‑76 by roll call.
