During discussion, staff explained the HACCP requirement relates primarily to rice handling procedures—because certain rice preparation steps for sushi require specific controls and testing—and said Snowfox performs batch testing and maintains logs and yearly lab results to document compliance. Staff also said Snowfox provides the recipe and testing model through its franchise structure and the local franchisee operates and is inspected on site.
The board’s vote recognizes the vendor’s variance and places the vendor on the town’s list of approved food service operations. The board did not attach additional conditions to the variance during the meeting; routine inspection follow‑up will continue to be handled by the health office.
