Commission recommends CUP for East Coast Pizza with standard restaurant conditions

The O'Fallon Planning and Zoning Commission on June 5 approved a recommendation on a conditional use permit to allow East Coast Pizza at 1120 Technology Drive, Suite 119 to sell beer and wine by the drink.
Applicant Josh Mathis told commissioners the concept is a family-friendly pizza restaurant with a focus on sports and athletic teams; he said the operator has a similar location in Chesterfield and hopes for a late-August soft opening with a Sept. 1 grand opening. Mathis said hours would be Monday–Thursday 11 a.m.–9 p.m., Friday–Saturday 11 a.m.–10 p.m., and Sunday 11 a.m.–8 p.m.
No public comment cards were filed. Commissioner Seymour asked about timing; a motion to approve staff recommendations was made and seconded, and the commission voted electronically with the motion passing. The approval was recorded as consistent with staff’s standard restaurant conditions.
