Rensselaer County recognizes Cornell Cooperative Extension for National Nutrition Month

The Rensselaer County Legislature on March 11, 2025 adopted a resolution recognizing Cornell Cooperative Extension of Rensselaer County for its contributions during National Nutrition Month and designating March 2025 accordingly.
During the presentation, Eileen De Paula, 4‑H program coordinator at Cornell Cooperative Extension, described youth nutrition and culinary programs including a monthly Junior Chefs Workshop that teaches food preparation, kitchen safety, and communication skills. De Paula said Cornell Cooperative Extension reaches hundreds of residents through nutrition sessions: “we teach the value of local foods, healthful nutrition classes, programs to over 800 Rensselaer County families and low income households, over 700 seniors throughout the Department of Aging, and over 1,100 youth throughout nutrition sessions.”
Nicola (Nick) Sigoloni, a newer staff member, outlined adult programs including Capital Region SNAP‑Ed lessons, school wellness support, digital literacy drop‑in sessions and horticulture outreach. Sigoloni noted the organization’s emphasis on practical, low‑cost ways to eat better and on supporting local agriculture.
The resolution text and presentations emphasized outreach to low‑income families, seniors and youth, a Junior Chefs competition at the Scattercoke Fair, and distribution of starter bags containing soil starter, tomato seeds and recipes for residents to try at home.
Legislators thanked the presenters and recognized the extension’s community work. The resolution directs the clerk to transmit a copy of the engrossed resolution to Cornell Cooperative Extension of Rensselaer County.
