Roselle mayor seeks extra liquor license for new restaurant, endorses DuPage legislative priorities

Mayor Koski opened the meeting by welcoming residents to 2026 and asking the board to support two items of near-term business: increasing Roselle’s number of Class I liquor licenses from nine to ten to accommodate a proposed restaurant, Mucho Flavor, and adopting a resolution endorsing the DuPage Mayors and Managers Conference 2026 legislative platform.
Koski said the applicant for the additional license has taken over a storefront on Irving Park Road and “they do meet the criteria” but must still complete state background checks before applying for a state license. The board indicated consensus to proceed so the business can complete state licensing steps.
On the legislative agenda, Koski described four priorities the village intends to support in Springfield: protecting sustainable municipal pensions; seeking increased municipal revenue share from state collections; modernizing public-records law to address new uses of records; and creating a uniform statewide approach to emerging mobility choices such as e-scooters and e-bikes. “We used to receive 10% of that. We now get 6.47%,” Koski said when describing declining municipal shares of state income tax revenue.
Koski also raised concerns about how some public-records requests are being used, saying residents and companies sometimes request records that staff must produce and are later republished online. “People are requesting records that take up a lot of our staff time to deliver to them to then post on YouTube and create content,” Koski said, arguing the village is monitoring state efforts to modernize the Freedom of Information Act and related laws.
The board voted by voice to endorse the DuPage legislative slate and signaled support for the extra liquor license, allowing the applicant to continue state-level licensing steps.
The next State of the Village event was announced for Jan. 26; the mayor said it will be streamed online and held in Village Hall.
