Council member Chris Weisenberg said food trucks are regulated primarily by the state health department but do not always meet the same fire-code safeguards required of brick-and-mortar restaurants, such as Class I hoods for fry cooking and specific clearance and generator spacing. "They're not regulated other than the state health department," he said, noting safety incidents elsewhere to justify local review.
The fire chief confirmed the department conducts no detailed inspections of food trucks beyond checking for onboard extinguishers. Several council members recommended that staff consult the state health department and the state fire marshal and return with recommended local standards that balance safety concerns with vendor viability. No new local regulation was enacted at the meeting; council asked staff to study options and return with proposals that would not unduly burden small vendors while addressing community safety.
