The Eden Prairie City Council on Feb. 10 proclaimed Tuesday, Feb. 17, 2026, as Empty Bowls Day to recognize Prop (People Reaching Out to People) for 55 years of local service. Mayor Ronald Case read the proclamation noting Prop’s 2025 service total of 2,416 households representing 8,178 individuals.
Representatives from Prop and Eden Prairie Liquor described recent fundraising and food-collection efforts. Jaime Urbina said the liquor-store 'dollar drive' raised $10,390.03 during a November promotion, and the store planned to present that amount to Prop that day. A Prop representative thanked the city and volunteers and said the community has been “pouring their hearts and their food and financial support into our programs” as need has increased.
Mayor Case noted the city’s ongoing coordination with Prop and said staff would consider reallocating available LAHA (Local Affordable Housing Aid) funds to help meet pressing needs. No formal grant or appropriation was adopted on the council floor at the meeting; the mayor said the city had offered what it could and would continue coordinating with nonprofit partners.
