The Select Board on Feb. 23 granted a flow-neutral bylaw variance to Devour Artisan Eatery to increase seating from 12 to 45 at 352 Main Street, citing staff determinations that sufficient sewer capacity exists for the proposed change.
Town staff explained the property is in the municipal sewer service area and that memos from the wastewater superintendent and the health agent indicated adequate capacity. Town Manager Renshaw said the proposed redevelopment would increase peak Title V wastewater flow from the parcel by 11.55 gallons per day and that the town has roughly 80,230 gallons per day of permitted discharge capacity remaining for such increases. The board and staff noted the municipal sewer outfall upgrade is projected to be available by 2032.
Applicant Anyes Hirschfield, speaking for herself and Hollis Hirschfield, said the business has operated more than six years and reported roughly $200,000 in revenue last year, much of which supported seasonal jobs. She said daytime occupancy would remain unchanged and that evening seating would expand, and she said she was open to a smaller seat count if the board requested one.
Board members questioned floor-plan details and economic assumptions; Hirschfield said a proposed floor plan exists and that she could accept a lower seat count. After public hearing closure, a board member moved to grant the variance; the motion was seconded and approved by voice vote. The applicant thanked the board on approval.
