The Planning & Zoning Board approved an amended and restated conditional use for Barrel of Monks Brewery at 1141 South Rogers Circle, allowing expanded indoor tasting areas, a roughly 1,000‑square‑foot outdoor patio with alcohol service, changed weekend hours that add lunch service, and incidental sales of beverages not manufactured on site.
Development Services planner Heather Hanson told the board the brewery had begun operating under several of the requested conditions and that the amendment would legalize current operations. “The brewery is already operating under these conditions being requested,” Hanson said, and staff concluded an updated shared parking analysis showed weekday peak demand of 191 spaces and weekend peak demand of 86 spaces, leaving adequate parking for the expanded use.
Applicant representative Ellie Zacharitis thanked staff for an expedited review and the team for their work; public comment was minimal and no opposition was recorded. After a brief discussion the board voted unanimously to approve the conditional use amendment and concurrent site plan updates, subject to conditions in the staff report.
The approval formalizes the brewery’s expanded public‑facing areas and weekend hours; the item will be processed in the city’s administrative files and any site plan landscaping revisions will be implemented under the city’s standard review and permitting process.
