The Bedford Select Board voted 3-0-0 on Feb. 9 to grant SW Bedford Inc. d/b/a Sam Walker’s American Tavern all-alcohol, common victualler, and entertainment licenses for a proposed restaurant at 213 Burlington Road.
Pat Dillon, CEO of Maverick Hospitality, and Sean Ahern, chief operating officer, introduced their application and said they intend to retain the Sam Walker’s brand. Dillon said the group typically partners with local charities and that the company has historically donated roughly $100,000 across its seven locations. The applicants told the board they expect to open in August and described the concept as a sports-bar, family-friendly restaurant.
Board members asked about hours of operation and community engagement; Town Manager Matt Hanson noted that while the hours requested on the application were allowed, the Select Board retains the authority to reduce hours if warranted. After brief discussion the board closed the public hearing and approved the licenses with a unanimous vote.
