The Government Operations Committee voted to approve a late‑night liquor license for BYT Enterprise LLC, which will operate as Gallo Santo at 215 West Main Street.
Police Chief Lykins told the committee the Liquor Commission had conditionally approved the B‑1 license with a 1:00 a.m. closing time earlier in the evening, subject to outstanding code and fire department corrections related to a 2022 fire at the building. “They are currently working on the build out of that building,” Lykins said, and staff noted inspections and a certificate of occupancy are required before the business may open.
Lykins described the proposed restaurant as family‑owned — “a mother‑daughter supported by dad and husband” — and said the owners expect to employ about 17 to 20 people with roughly 10 employees on site at a given time. The committee moved and seconded approval and took a roll‑call vote; the chair announced the motion carried.
Committee members welcomed the new business and staff reiterated that the license remains subject to the Liquor Commission’s conditions and to final code and fire approvals and issuance of a certificate of occupancy.
