Aramark reports higher meal participation, menu changes after transition; students asked for more variety

Nicole Upton, Aramark's food-service director for the district, and district manager Jay Gustaitis presented a client business review covering meal participation, menu changes and operational adjustments since Aramark began service in December.
"Total we are averaging right now total meals per service day, almost 2,300," Upton said, noting breakfast participation was just under 15% and lunch participation nearly 57% of enrolled students. She described limited-time offers, menu sampling and increased fresh-produce access as steps that have boosted participation and teacher and student satisfaction.
Upton acknowledged challenges, including early staffing shortfalls and supply logistics, and said Aramark is working to reduce single-use plastics and expand scratch or —speed-scratch— cooking. She also noted that the vendor has implemented accommodations for allergens with gluten-free and top-nine allergen menus when needed and maintains communications with families about menu ingredients.
Committee members praised the vendor's responsiveness and asked about survey methodology; Upton and Gustaitis said the student-viewpoint survey response rate was low (about 5% representing roughly 169 responses) and that the vendor will continue outreach and sampling to improve menu fit and participation.
No formal committee action was required; members thanked the presenters and requested continued reporting on participation and special-diet accommodations.
