Mineola students pitch 'Mustang Brew' rebrand for Synergy Cafe

Two juniors at Mineola High School presented a student-driven rebrand of the Synergy Cafe at the board meeting on May 7, describing a redesign and operational ideas aimed at increasing school identity and student engagement.
The students said they visited the cafe every morning and saw opportunities to improve convenience, spirit and the social atmosphere. They worked with the district adviser and local business mentors, including Corina Marrow of Willow's Cove Salon, and collaborated with Mineola's virtual enterprise firm, Anchor Advisory, whose CEO Michael Lampasona said his team conducted market research and helped develop the new brand identity.
"First off, we conducted market research using demographics, geographics, psychographics, and behavioral segmentations ... With these in mind, we rebranded Mineola Mustangs Brew with school colors like red, white, and black in order to promote school identity," Lampasona said. Students described planned monthly specials and seasonal menu items and said the cafe is student-run with opportunities for internships and mentorships.
Board members praised the student initiative as "student-driven," commended the business program and encouraged the students to continue their phased approach to implementation. The district thanked mentors and the Chamber of Commerce for community support.
