Ada County approves seasonal mint distillation facility with conditions

Ada County planning commissioners on April 8 voted to approve a conditional‑use permit, partial master site plan and associated variances for a seasonal mint distillation and processing facility on a roughly 8.4‑acre parcel in a largely agricultural area.
Planning staff presented the project, which proposes a lean‑to processing structure and operation July–September from 8 a.m. to 8 p.m., two employees and an estimated two to five mint deliveries per day during the season. The applicant, Dan Noble, told commissioners the facility would process mint oil into drums for sale and would serve local growers, reducing the need to transport mint to distant processors.
Staff recommended approval with conditions including engineering by an Idaho‑licensed engineer, drainage retention on site, building permits and required coordination with the Boise Project Board of Control and Central District Health. Neighbors did not register opposition at the hearing. The board approved the conditional use and variances as conditioned.
