Beer board grants Roots Prime Italian Chop House permit contingent on certificate of occupancy

The Franklin City Beer Board on June 9 voted to approve an on-premises consumption beer permit for Roots Prime Chop House LLC, d/b/a Roots Prime Italian Chop House, at 440 Cool Springs Boulevard, contingent on the issuance of a certificate of occupancy.
City staff told the board that the application is complete but that the certificate of occupancy remained outstanding. "It's still several weeks out from that," a city staff member (Miss Davey) said, while noting that coordination between the applicant and Building & Neighborhood Services might accelerate final inspections.
Applicant Jose Serrato, who identified himself to the board and described his existing restaurants and expansion plans, said the Roots Prime concept will serve steaks, chops, pastas and seafood and emphasized a strict alcohol-service policy including carding and staff training. "We have a pretty good structure when it comes to training to ensure that we are enforcing the best practices when it comes to serving alcohol responsibly," Serrato said.
Alderman Barnhill asked about staffing and capacity; Serrato estimated about 75–80 employees at the new location (full-time and part-time). Following discussion, the board approved the permit contingent upon issuance of the certificate of occupancy; Alderman Barnhill, Alderman Caesar and the chair voted yes.
What happens next: The permit takes effect after the city issues the certificate of occupancy and any standard post-approval conditions are satisfied.
