Council approves liquor license for Teresa’s Mexican Restaurant under new ownership

The Prior Lake City Council on June 9 approved an on-sale intoxicating liquor license for Teresa’s Mexican Restaurant, which is under new ownership at 6680 Bordon Street NW.
Community Development Director Case McCabe told the council staff had completed its review and found no outstanding taxes or property liens and no items under Minnesota Statute 340A that would prevent issuance of the license. The council opened a public hearing; no members of the public spoke and the hearing was closed within minutes.
When Council Member Helier asked whether Teresa’s had any recent violations, Assistant City Manager Lori Olsen said the restaurant did have a compliance violation in December 2025 but that incident "would fall under the previous owners," and staff confirmed no current reason to deny the new owners’ application.
Council Member Helier moved and Council Member Churchill seconded the motion to approve the on-sale intoxicating liquor license. The motion passed on a voice vote.
The license approval is subject to the usual city licensing conditions and state statute requirements.
