Bud's Coffee Group presents Sally’s Diner plan; board asks about signage, parking and bike-path wayfinding

At the June 29 Planning Board meeting, Jack Kowalski of Bud's Coffee Group and a representative from Luisi Brothers described a first-time tenant-change site-plan for Sally’s Diner and an adjacent ice-cream shop at 2837 Aqueduct Road (Rivers Lehi Senior Center site). Kowalski said Bud's will run the diner concept and that the ice-cream operation will be a separate application and a separate operator.

Board members asked operational and site questions, including whether grease traps and kitchen ventilation had been installed, how pickup parking would be handled, planned hours, signage and bike racks. Kowalski said grease traps and necessary equipment are installed and that the diner plans Monday–Sunday hours of roughly 7 a.m. to 7 p.m. He said the team will consider bike racks and work with county partners on future wayfinding signage to the bike path.

The board suggested updating the site plan to clearly label the ice-cream space as a potential future tenant if it is not yet finalized, to highlight the building end where the diner will sit, and to show demarcated parking, potential bike-rack locations and any proposed outside seating. Members recommended a short site visit by project leads to confirm construction progress; the board named Mr. Laflamme as the project lead for further follow-up and asked the applicants to coordinate any additional materials with planning staff.

No formal vote was taken on the Sally's Diner tenant change at the June 29 meeting; staff noted applicants could bundle additional items for a future submission or return for another meeting if they preferred to add signage or bike racks later.
