The committee approved minutes from Sept. 3, 2025, on a 4‑0 vote after Member Mike San Felippo moved to approve and Member Erik Buchelt seconded. Clerk/Treasurer Stephanie Waala, who attended virtually, said amplified sound permit applications have been submitted and will appear on the Village Board agenda for May 4 for final action.
The committee set concession terms and pricing for the season. "The percentage share will be 15% and a cleaning deposit will additionally be charged," Chairman Urbanski said. After discussion the group set standard prices: burgers and brats $6; cheeseburgers $7; double hamburger and double brat $8; double cheeseburger $9; hot dogs $4; and a minimum $6 for an additional entrée.
On food sourcing, Urbanski said the committee will require concession groups to use the provided meat and buns to maintain consistency; members discussed switching from Sysco buns to Oostburg Bakery buns at about $0.04 more per bun and the option to freeze and donate excess product. Member San Felippo said local meat tended to dry out and cost more, which has driven the committee's reliance on Sysco. The group debated serving raw brats versus precooked; San Felippo raised food‑safety concerns while Clerk/Treasurer Waala noted other Brat Frys use raw brats and rely on vendors to ensure cooking. Member Erik Buchelt suggested pre‑cooking fresh brats for groups to reheat on the day of service.
Sponsorships from the Garden Club and Lions Club were reported; San Felippo proposed using year‑end excess funds to buy additional stainless‑steel prep tables. Resident Blaine Werner asked the committee to consider garbage‑can covers by the concession building; resident Chuck Mueller said the LPR committee is already investigating tables and related equipment.
The Fire Department will handle alcohol sales again this year with the committee's 15% share, Urbanski said; San Felippo noted the EVS trailer is available if needed. Committee duty assignments were set: Erik Buchelt as food supervisor and Laurie Urbanski as band coordinator; fundraising contacts will be divided among all members. The committee scheduled its next meeting for May 21 at 6 p.m. and asked that a representative from each concession group attend to receive updates.
The meeting adjourned at 8:16 p.m.
