The Pleasant Prairie Village Board approved a liquor licensing application for Cooper's Hawk Pleasant Prairie LLC to operate a Cooper's Hawk Winery and Restaurant at the Plaza Prairie location, granting a Class B beer license, a reserved Class B intoxicating liquor license and an outdoor extension, contingent on payment of fees, background check clearances and issuance of occupancy permits.
Attorney Jennifer Gallery (speaker 12) represented the applicant and answered board questions about the premises, which staff described as a roughly 12,759-square-foot restaurant with inside seating around 272 and an outdoor patio area for about 40 customers. Staff told the board required publication and background-check steps had been completed and noted the reserved license requires a $10,000 initial issuance fee and prorated annual fees.
Trustees discussed anticipated local economic and entertainment benefits; the motion to approve the licenses and appointment of agent Corey Johnson was moved and seconded and passed by voice vote.
Next steps: issuance of the license remains contingent on payment of municipal charges, issuance of occupancy and completion of other listed contingencies by staff.
