The Wausau Public Health and Safety Committee voted unanimously to grant a 60-day extension to Copper Kettle Steakhouse so the owner can complete construction and open.
Owner Robert, who appeared before the committee, said outstanding tax and federal liens delayed his closing and cost him seven to eight weeks of construction time. “We're about 3 weeks out from being ready,” he said, and asked for less than the full 90-day extension on the agenda.
Alder Watson proposed a 45-day extension, then amended to a safer 60 days; the committee seconded and approved the 60-day extension by voice vote. Chair Larson wished the owner well and said the committee looks forward to the business opening in the neighborhood.
The extension allows the applicant additional time to resolve outstanding encumbrances and complete construction work without the liquor-license timing penalty that would otherwise apply.
